There is a tradition, especially in Oaxaca, of adding fruit to a mole. The fruits are chopped extremely fine and are completely absorbed into the sauces and are never sweet. This great sauce follows in that tradition. The Aji Amarillo pepper and the strawberries add an unusual "sweetness" to the peppery sauce. Just add chicken and some stock and you won't believe the unusual flavors. Or place a piece of salmon with some onions and peppers in tin foil or parchment paper and bake.
