Salmon With Strawberries

Throughout the vast array of Mexican cuisine, you are always made aware that the sharpness of the chiles are flavored with the sweetness of local fruit. Here is an easy and delicious example.


  • 4 fillets of salmon about 1/3 pound each

  • Sea salt

  • ¼ cup of olive oil

  • 2 shallots, peeled and thinly sliced

  • ½ cup ChileBoss™ Strawberry Amarillo Sauce

  • 1 tablespoon sherry wine vinegar

  • 4 sprigs fresh thyme

  • 1 cinnamon sticks, broken in half

  • ¼ cup of fresh or bottled lime juice

  • ¼ cup sliced strawberries

  • 4 tablespoons unsalted butter

  • Black pepper


  1. Season the fish with salt

  2. Set the filets aside and let rest at room temperature.

  3. Heat the oven to 425 degrees.

  4. Oil a large baking sheet.

  5. In a medium saucepan over low heat, simmer together the shallots, vinegar, thyme, cinnamon and the Strawberry Amarillo Sauce until slightly thickened for about 15 minutes.

  6. Toss in strawberries, the butter and cook until berries just soften.

  7. Add the lime juice to the baking pan.

  8. Place the salmon on the baking sheet and spoon the berry mixture over salmon.

  9. Bake until the salmon is cooked to your desired doneness, about 15 minutes for medium.

  10. Serve with the sauce and top with more chopped strawberries.
