What is a Mexican Simmering Sauce?  Why not just buy a hot sauce?

Why do you eat food? Why do you like Food A and not Food B?  Why do you decide to cook A and not B?  These are questions you really do ask yourself every time you cook or go to a restaurant.

When you eat a meal, the first thing you want is a familiar taste.  I like how it tastes, you say to yourself, meaning it has a flavor that you enjoy. If you are using ChileBoss® then you are looking for Mexican Flavors and not just a picante sauce.  You have tasted the cumin, the Mexican oregano, the anise seed in good Mexican food.  You know the difference between that food and pizza sauce with jalapenos in it to make it hot.

And for cooking? Well, that’s simple.  Most of us, most of the time, do not want to shop for 3 days to find exotic ingredients and do not want to spend hours making the food, but we still want it to taste good.  Right?

Most of us do not separate Food A taste and Food A cooking.  We want something tasty, and within reason, a certain ease in cooking.  And in today’s market, we want something that resembles food, not chemicals.

This last point is so prevalent in our society that even fast food giants like McDonalds are reacting to the pressure of using Real Food.

Here are the ingredients in a popular starter sauce. Remember that all ingredients are listed by volume, meaning the most to the least:

Tomatoes (diced tomatoes, tomato juice, citric acid, calcium chloride), Water, Green Chiles (green chili peppers, salt, citric acid), Tomato Paste, Brown Sugar, Red Bell Pepper, Green Pepper, Balsamic Vinegar (naturally occurring sulfur dioxide), Garlic, Dijon Mustard (water, mustard seed, vinegar, salt, white wine, citric acid, turmeric, tartaric acid, spices), Cider Vinegar, Onion, Green Onions, Worcestershire Sauce (distilled vinegar, molasses, water, sugar, onions, anchovies [fish], salt, garlic, cloves, tamarind extract, natural flavors, chili pepper extract), Spices, Beef Flavor Broth Concentrate (beef stock, natural flavor, salt, yeast extract, sugar, beef fat), Dried Garlic, Salt, Paprika, Dried Chipotle

Extensive use of other manufacturers products to make this product is evident from the use of parenthesis after the product name.

Here are the ingredients in ChileBoss® New Mexico Red:

Water, tomato, tomatillo, onion, vinegar, yucca, new mexico red chile, contains 2% or less of: carrots, celery, dried guajillo pepper, pasillo de oaxaca chile, plantain, sugar, olive oil, garlic, salt, citric acid, spices, toasted chile pepper seeds.

No “Natural Flavors” that are always chemicals, Nobody else’s products thrown in for flavor and minimal citric acid, salt and sugar.  All chiles are bought whole, roasted and deseeded by hand, soaked and blended into the sauce.  All sauces except for the Poblano Verde and the Yucatan Amarillo are put through food mills to remove solids.  Most other sauces are vigorously blended to incorporate the solids and eliminate the food mill step in manufacturing.

So what does this mean to you, the home cook?  In “The Flavor Bible,” Page and Dornenburg discuss the use of cookbooks, saying, “…they also have come to provide a false sense of security for which the unsuspecting cook pays a price.  When a recipe is … blindly followed, it negates the cook’s own creative instincts… not to mention …the pleasure of truly “being” in the moment.”

All of us are creative beings.  We like making things and love saying “Hey look what I made.”  Whether it is a dinner for you alone, or you and your partner, or simple food served to friends while watching football games, you know how great it feels when someone says, “Wow, this is really good. Did you make this?”  ChileBoss® Simmering Sauces help you cook in a manner that makes your creative energy show through.  Other cooking sauces may be just “throw it in and walk away” but no one is going to say “Wow.  This is really good.  Did you make this?”  It’s feels so good to get complimented on what we do, and food made with love should always receive a compliment.

Yes, you will have to add some extra spices or make it as picante as you want, but there is nothing better than a 20-minute shrimp dish using ChileBoss® Poblano Verde, or taking 4 pieces of fish, adding ChileBoss® Yucatan Amarillo, wrapping it in tinfoil, baking it for 20 minutes and serving it with some rice. Or taking some pre-cooked chicken, sautéing it with some onions and raisins in ChileBoss® New Mexico Red, then putting it in a tortilla, rolling it up, spicing up more DIY ChileBoss® Red Enchilada sauce, baking it with cheese and serving it in 30 minutes.  Or taking an hour out of your BBQ day to use ChileBoss® New Mexico Mole and make DIY BBQ sauce, the best BBQ you ever had. Or surprise everyone by coming up a great light meat, fish or vegetable dish with ChileBoss® Strawberry Amarillo and some fruit.

That is why we made ChileBoss® sauces the way we did.  Your dish should be your dish, not ours.  We would like to share a great true story about using a ChileBoss® sauce!  We gave ChileBoss® Yucatan Amarillo to a woman who cooked so little she kept her shoes in the oven because it was a good storage place.  She made the 20-minute shrimp dish as per our instructions, invited some friends over and when she served it to her friends they were totally surprised and unanimously said, “Wow.  This is really good.  Did you really make this?”  She even had to ask a friend to bring the rice because she never made rice before!!!  She is known as NEVER cooking anything for anyone.  In the past, when friends came over they brought their own food.  And yes, they really said that.

This is the true ChileBoss® story — quick dishes that are tasty and that invite your creative sensibility to help make your food your own.  Not “paint by number” dishes.

We took the hard work out of making the sauces so you could just be responsible for adding the love.
