What is a Mexican Simmering Sauce?  Why not just buy a hot sauce?

Why do you eat food? Why do you like Food A and not Food B?  Why do you decide to cook A and not B?  These are questions you really do ask yourself every time you cook or go to a restaurant.

When you eat a meal, the first thing you want is a familiar taste.  I like how it tastes, you say to yourself, meaning it has a flavor that you enjoy. If you are using ChileBoss® then you are looking for Mexican Flavors and not just a picante sauce.  You have tasted the cumin, the Mexican oregano, the anise seed in good Mexican food.  You know the difference between that food and pizza sauce with jalapenos in it to make it hot.

And for cooking? Well, that’s simple.  Most of us, most of the time, do not want to shop for 3 days to find exotic ingredients and do not want to spend hours making the food, but we still want it to taste good.  Right?

Most of us do not separate Food A taste and Food A cooking.  We want something tasty, and within reason, a certain ease in cooking.  And in today’s market, we want something that resembles food, not chemicals.

This last point is so prevalent in our society that even fast food giants like McDonalds are reacting to the pressure of using Real Food.

Here are the ingredients in a popular starter sauce. Remember that all ingredients are listed by volume, meaning the most to the least:

Tomatoes (diced tomatoes, tomato juice, citric acid, calcium chloride), Water, Green Chiles (green chili peppers, salt, citric acid), Tomato Paste, Brown Sugar, Red Bell Pepper, Green Pepper, Balsamic Vinegar (naturally occurring sulfur dioxide), Garlic, Dijon Mustard (water, mustard seed, vinegar, salt, white wine, citric acid, turmeric, tartaric acid, spices), Cider Vinegar, Onion, Green Onions, Worcestershire Sauce (distilled vinegar, molasses, water, sugar, onions, anchovies [fish], salt, garlic, cloves, tamarind extract, natural flavors, chili pepper extract), Spices, Beef Flavor Broth Concentrate (beef stock, natural flavor, salt, yeast extract, sugar, beef fat), Dried Garlic, Salt, Paprika, Dried Chipotle

Extensive use of other manufacturers products to make this product is evident from the use of parenthesis after the product name.

Here are the ingredients in ChileBoss® New Mexico Red:

Water, tomato, tomatillo, onion, vinegar, yucca, new mexico red chile, contains 2% or less of: carrots, celery, dried guajillo pepper, pasillo de oaxaca chile, plantain, sugar, olive oil, garlic, salt, citric acid, spices, toasted chile pepper seeds.

No “Natural Flavors” that are always chemicals, Nobody else’s products thrown in for flavor and minimal citric acid, salt and sugar.  All chiles are bought whole, roasted and deseeded by hand, soaked and blended into the sauce.  All sauces except for the Poblano Verde and the Yucatan Amarillo are put through food mills to remove solids.  Most other sauces are vigorously blended to incorporate the solids and eliminate the food mill step in manufacturing.

All of us are creative beings.  We like making things and love saying “Hey look what I made.”  Whether it is a dinner for you alone, or you and your partner, or simple food served to friends while watching football games, you know how great it feels when someone says, “Wow, this is really good.
