Fried Eggs and Avocado Rings
Here’s a new way of preparing fried eggs that’s sure to brighten your morning.
2 fresh Mexican chorizo sausage
1 medium red onion cut into rings
½ cup freshly grated Parmesan cheese
¼ + cup of ChileBoss™ Mole or Red Sauce
2 tablespoons of butter
1 tablespoon of olive oil
Preheat the oven to 350 F
It is best to grate fresh Parmesan for this recipe. I have tried it with commercial grated cheese and it doesn’t really work.
Place a piece of parchment paper on a cookie sheet pan.
Take about 1 ½ tablespoons of the grated cheese and make a mound on the sheet.
Using your fingers, spread the cheese into a round disk that is very thin and no more than 2” in diameter. Do Not push it down! Gently spread the cheese into a disk. You should be able to see the parchment paper through the cheese. Repeat until you use all the cheese.
Place in the oven about 12 minutes until the chips become just browned. Do not dry them out.
Remove the pan from the oven, and with a thin spatula lift them off the sheet and onto a plate.
Take the onions, the butter, the oil and the ChileBoss™ sauce and place it in a pan large enough to hold the onion in a single layer.
Cook the onion over a slow flame, stirring every 5 minutes. Do not fry the onions. Gently cook them for about 45 minutes. They will get golden and soft and retain their shape. If the pan is getting dry, add a little more ChileBoss™ sauce.
When finished, place in a bowl and set aside.
Cut open the avocado crossways and carefully remove the rings. The 2 center rings are the best because they are big enough to hold the egg.
Place them on a plate and sprinkle with fresh lime juice so that they do not darken.
Cook the sausage and cut crossways, making ¾ inch pieces.
Using a 2” oiled prep/plating forming ring, drop the eggs into each one and fry them.
When they are finished, use a sharp knife and cut along the edges to make sure that they release from the mold. Carefully lift the egg out and place it on the avocado ring.
Season the eggs with salt and pepper.
Assemble all the other ingredients on the plate and serve.
